Het was jaren geleden op een namiddag ergens tussen Kerst en Nieuw op het Schotse eiland Isle of Skye.

De avond ervoor hadden we stevig kennisgemaakt met een Schotse cocktail classic: de Whisky Mac.

Rond die tijd van het jaar is het in de Highlands meestal stevig koud, is de lucht alle mogelijke prachtige tinten van grijs en is er zelden zon.

Na een stevige wandeltocht arriveerden we op een strand waar ons een prachtig kampvuur wachtte.

En bekers hete Whisky Mac!

Warme alcoholische drankjes smaken nu eenmaal beter in de koude buitenlucht dan binnen aan de open haard.

En een cocktail die je zowel koud als heet kan drinken kom je niet zo vaak tegen. Althans ik toch niet tenminste.

Voor een Whisky Mac heb je enkel twee ingrediënten nodig: een Blended Schotse Whisky zoals J&B Rare, en gemberwijn.

Toegegeven het eerste is makkelijker te vinden dan het tweede.

Gemberwijn behoord al sinds de 19de eeuw tot het Brits culinair erfgoed.

Stone’s en Crabbie’s waren toen, en zijn dit nog steeds, de twee populairste producenten.

Stone’s werd in Londen gemaakt en Crabbie’s in Leith, ten noorden van Endingburgh.

Toen eind 1831 er in Groot Brittannië een cholera epidemie uitbrak dacht de bevolking dat gemberwijn de nodige bescherming tegen de ziekte gaf.

Beide producenten konden de vraag naar hun gemberwijn nog amper aan.

Gemberwijn is een zoete wijn met 13,5% alcoholgehalte die wordt gemaakt van rozijnen, gedroogde gember, kruidnagel, kaneel, citroen en sinaasappel.

Stone’s heeft een mildere smaak dan Crabbie’s.

Om puur met ijs te drinken heb ik liever Stone’s maar in Whisky Mac heb ik wel graag het kruidige van een Crabbie’s.

Stone’s vind je België bij de Britse Stonemanor winkel in Everberg, tussen Brussel en Leuven.

Aan het begin van de winter bestel ik mijn Crabbie’s voorraad telkens via Amazon UK.

 

Whisky Mac Koud

 

Per persoon:

2 shots J&B Rare Whisky

1 ½ shot gemberwijn

 

Vul een glas met ijsblokjes, giet er de whisky en de gemberwijn bij en roer.

Een shot is 25 ml.

 

 

Whisky Mac Heet

 

Per persoon:

2 shots J&B Rare Whisky

2 shots gemberwijn

75 ml kokend water

 

Giet de whisky en de gemberwijn in een voorverwarmde beker of glas.

Je kan de whisky en de wijn ook zachtjes verwarmen in een pan maar zeker niet laten koken.

Giet er het kokende water bij en roer. Heb je liever een zoeter drankje dan kan je eventueel wat honing door je drankje roeren.

Een shot is 25 ml.

 

 

Whisky Mac: Hot and Cold

It was years ago, on a chilly afternoon somewhere, between Christmas and New Year on the Scottish Isle of Skye.

The night before we had discovered this great classic Scottish cocktail: the Whisky Mac.

Around that time of the year it is cold in the Highlands and the sky has the most beautiful shades of gray.

After a brisk hike we had arrived at a beach where a wonderful campfire awaited us.

And cups of hot Whisky Macs!

Warm alcoholic drinks just taste so much better in the cold outdoors than in front of a fireplace.

And a cocktail you can drink hot or cold you don’t come across so often. At least I do not anyway.

For a Whisky Mac, you only need two ingredients: a Blended Scotch Whisky such as J & B Rare, and ginger wine.

In Belgium the first is easier to find than the second.

Ginger Wine has belonged to the British culinary heritage since the 19th century

Stone’s and Crabbie’s were the biggest producers then, and have remained ever since.

Stone’s was made ​​in London and Crabbie’s in Leith, north of Edingburgh.

In October 1831 a cholera epidemic broke out in Great Britain and people assumed that drinking ginger wine would protect them from the disease.

Both producers could barely keep up with the demand for their wine.

Ginger Wine is a sweet fortified wine with a low 13.5% alcohol percentage.  It is made from raisins and flavoured with dried ginger, cloves, cinnamon, lemon and orange.

Stone’s has a milder flavor than Crabbie’s.

I prefer Stone’s ginger wine to drink pure on the rocks but I prefer the spiciness of Crabbies’s in my Whisky Mac.

You need a blended whisky to make a Whisky Mac. Don’t be tempted to use a peaty single malt because the peat will completely drown out the delicate ginger flavour in this drink.

 

Whisky Mac Cold

Per person:
2 shots J & B Rare Whisky
1 ½ shot ginger wine

Fill a pre-chilled glass with large ice cubes. Pour the whiskey and ginger wine over the ice and stir.

Whisky Mac Hot:

Per person:
2 shots J & B Rare Whisky
2 shots ginger wine
4 shots of boiling water

Heat the whisky and ginger wine very gently making sure it doesn’t come to a boil. Pour into a mug, add the boiling water and stir. Stir in some honey if you prefer  a sweeter drink.
